CREME D'AUTUNNO

AUTUMN PUREES

Autumn has always provocated different feelings in me: days get shorter and cold nose tips in the frosty morning air make me regret warm September evenings. But the bad mood disappears as soon as I see the autumn colors of the woods, in a clear day. The recipe that I propose is a tribute to this season, when the avenue snowes dry leaves and footsteps crunch on the fallen ones...
Ingredients (makes 2 cups):
2 small potatoes
1 piece of ginger root (about 20 g)
1 red beet
2 carrots
6 tbs of milk (the one you prefer)
salt, to taste
sunflower seeds, to garnish

Procedure:
Separately boile carrots, potatoes and beets until tender, then mash them with a fork into three different bowls, grate ginger in the potato one and mix well. Add two tablespoons of milk and a pinch of salt to each purèe and whip them until fluffy. Arrange in layers in a transparent bowl, starting with carrots, continuing with potatoes and ending with red beets. Garnish with sunflower seeds. Autumn is served!

Couldn't I remember a warm late summer afternoon on the coast?
